Ammonium nitrate regulated the color characteristic changes of pigments in Monascus purpureus M9

Abstract Monascus pigments (MPs) with different color characteristics, produced by submerged fermentation of purpureus M9, have potential application in food industry. In the present study, effects and regulatory mechanisms ammonium nitrate (AN) on characteristics MPs were investigated. The concentration intracellular was significantly decreased when subjected to AN. hue lightness value indicated AN altered total appearance from original red orange. HPLC analysis for six major components showed that production rubropunctatin or monascorubrin, reduced undetectable level, whereas yields monascin, ankaflavin, rubropunctamine monascorubramine, apparently increased supplement. To be noted, via real-time quantitative PCR strategy, expression level mppG , closely relative orange biosynthesis, down-regulated. However, mppE involved yellow pathway, up-regulated. Moreover, broth pH dropped 2.5–3.5 process resulted treatment, along extracellular polysaccharide biosynthesis. Taken together, change categories amounts might driving force variation M. M9. study provided useful data producing compositions modified characteristics.
